You are technically correct, but for 99% of people taxes are incomprehensible, and it is difficult to plan for a thing you don't understand, so then therefore reasonable to set your deductions to be on the safe side.

There is basically a handful of gigantic providers that de facto control email despite it's decentralized nature.
Google, Microsoft, Yahoo.. anybody else? Then you have a handful of medium players like Proton mail, and after that it is a nightmare to try and run an email that will reliably be delivered.
