Well, you can run your own chatmail server (I don't, but you can)... Also the guys who develop it are cool. They're always at the CCC so you can hang out with them. No weird connections with Israeli intelligence backed companies like Some Other Chat Protocols...
There is no single central signal server. Signal uses #AWS cloud, next to Google Cloud, Microsoft Cloud and Cloudflare, all under US legislation. If any of these clouds goes down or becomes otherwise problematic, chatting degrades or fails.

I feel like nowadays you could have an authoritarian regime control the general populace through strict censorship of videos, images, podcasts, etc. but have total freedom when it comes to long-form writing, because the medium itself is sufficient to gatekeep anything troublesome from the masses.
